Here is Tip #4 for improving the health, energy and vitality of your family from Holistic Health Coach and author, Michelle Mansfield...

Veggies...veggies...veggies...are vital!

  • Condiments! Create fun condiments with plain yogurt, hummus, pureed veggies, or homemade dressings so kids can have fun and make it even tastier. Our favorites are yellow mustard mixed with avocado mayo along with plain Greek yogurt with sea salt, parmesan, and dill. Have them create their own!
  •  Become BFFs with your local farmer! Start with simple conversations at your local farmer’s market with your farmer and family. If you’re able to actually go to their farm, even better. Connect the farming to the table with a voice that isn’t yours (and that’s OK!). Brooklyn loves our local farmers, Marc & Luis of Rustic Road Farm.
  • Everything but the kitchen sink. When veggies are on their last legs, use in whatever you’re making at that moment. Puree in a sauce, add to a soup, mix into your turkey meatloaf (we love broccoli & sweet potato in ours), make a frittata (I have a 20 minute freezable recipe!), or use in a smoothie.
  • Frozen veggies. Brooklyn loves frozen peas and green beans. She loves the crunch and feels they’re like a popsicle. This is a great snack option or to put in lunch boxes.
